Grilled Peaches with Honey & Mascarpone
What you need:
2 ripe peaches
1/2 cup mascarpone cheese
1 tbsp Greek yogurt
1-2 tbsp honey (plus extra for drizzling)
1/2 tsp vanilla extract
Method:
1.In a small mixing bowl, combine the mascarpone, heavy cream, honey, and vanilla extract. Whisk gently until the mixture reaches a smooth, spreadable consistency like whipped cream.
2.Slice the peaches in half and remove the pits. Lightly brush the flesh with oil or melted butter so they don’t stick.
3.Heat a grill, barbecue, or stovetop griddle pan to medium-high. Place the peaches flesh-side down and cook for 4 to 5 minutes until they are warm, slightly softened, and have dark grill marks.
4.Place the warm peach halves on plates or wide bowls. Top each half with a generous dollop of the honeyed mascarpone, drizzle with extra honey, and enjoy!
