Honey Roasted Carrots

What you need:
8 medium carrots, peeled
3 tablespoons olive oil
¼ cup honey
salt and ground black pepper to taste

Method:
1.Preheat oven to 1175°C fan forced.

2. Place whole carrots in a baking dish and drizzle with olive oil; toss until carrots are completely covered with oil. Drizzle honey over carrots, then season with salt and pepper; mix until well coated.

3.Bake in the preheated oven until carrots are just tender, about 30 minutes, or longer if you prefer softer carrots.

4.Serve hot and enjoy!

Hot Toddy

What you need:
¾ cup hot water
1 ½ ounces whiskey, bourbon, or rum
2-3 teaspoons honey, to taste
2-3 teaspoons fresh lemon juice, to taste
Optional garnishes: a lemon round or a cinnamon stick 

Method:
1.Bring the water to a simmer in a kettle or small saucepan.

2. Pour the hot water into a mug. Add the spirit, honey, and lemon juice. Stir until the honey is completely dissolved.

3.Taste the mixture and add more honey for sweetness or lemon juice for more zing, as desired.

4.Garnish with a lemon round and/or a cinnamon stick, if using, and serve hot.

Honey Whipped Feta

What you need:
4 oz Feta cheese
4 oz cream cheese, room temperature
1 tablespoon olive oil
½ tsp minced garlic
½ teaspoon dried basil
¼ cup honey
1 Tbsp chopped pistachios
1 teaspoon finely chopped chives
½ teaspoon cracked black pepper

Method:
1.In a food processor, combine feta, cream cheese and olive oil until cheese are well combined and smooth. Add basil and garlic, mix well.

2.Scoop cheese out of the food processor onto a small plate or into a shallow bowl. Use a large spoon to create a well in the center of the cheese. Fill the well with honey. Garnish the sides of the well with chives, pistachios and black pepper.

3.Serve immediately, enjoy.
